Recipe: Texas Caviar

This is my FAVORITE QUICK AND EASY recipe, introduced to me when my youngest daughter (Erin, now 20) was just a baby and I, somehow, had time for a book group. This recipe can be made a day or so ahead of time, at the risk of it being eaten quickly anyway.

  • Bell Peppers (Green, Red, Yellow, Orange)
  • Black Eyed Peas
  • Red Onion
  • Olive Oil
  • Red Wine Vinegar
  • Texas Pete or Frank’s Red Hot Sauce
  • Cilantro
  • Salt and Pepper

No measurements needed, just mix together your desired amount of the following ingredients, and then serve with tortilla chips (Tostitos Scoops work best). Bonus is that you can use a scoop of it as part of an omelet–cooked or raw. Delicious!
