Recipe: We made Curry! *By ‘we’, I mean our houseguests did

I’ve always wanted to make an Indian meal, but lacked confidence, I guess, in getting it right. Every time I saw something that looked tasty and interesting, I was intimidated by the process. Great news is that our middle son Max, and his girlfriend Christina, along with their dog Bella, are staying with us (which makes for 5 dogs in the house for 2 weeks). With a houseful, we’re taking turns cooking. 

Max and Christina are travelers at heart, and they’ve been to 20+ countries in the past 10 years, and have experienced authentic food all over the world. Based on some of the stories I’ve heard, their palates are braver than mine, but I was very interested when Christina said she wanted to make butter chicken. What a bold name.

It turns out, I was right to be intimidated by the process, as she spent a significant amount of time over the course of two days, making this butter chicken, also known as Indian Butter Chicken, also known as Murgh Makhani, which, according to the recipe she used, is similar to Chicken Tikka Masala

Here’s a link below to the recipe that she used for inspiration, but like me, she likes cooking because of the ability to improvise on the fly, so yours won’t taste exactly like my dinner did, but that’s ok because you weren’t at my table. I’d love to hear your feedback if you make it. Reviews were all positive at my house, as would be expected when someone is visiting and prepares a meal. But it actually was delicious!
